This work produced pyrodextrins from breadfruit (Artocarpus altilis) starch and evaluated the effect of HCl and CH3COOH as catalysts of pyrodextrinization on physicochem. and structural properties of pyrodextrins. Pyroconversion was performed by spraying the acid solution on starch (1.82 g acid/kg starch) and heated to 140°C for 180 min. The pyrodextrins were analyzed for chem. composition, dextrose equivalent (DE), color parameters, solubility, intrinsic viscosity, IR spectrum, and granule morphol. The pyroconversion decreased (p < .05) the ash content and the intrinsic viscosity of native starch. The HCl-pyrodextrin was slightly yellow, very water soluble with 8.8% DE. The CH3COOH-pyrodextrin was white, 8.8% soluble with 1.2% DE. The pyrodextrinization reduced alpha(1,4) bonds of glucans without drastically changing the granule’s morphol. The use of acetic acid was considered a milder treatment, however, it caused an increase in the total and soluble dietary fiber contents, supporting its use to produce pyrodextrins for food applications. In this study, the effects of arginine on growth, serum antioxidant levels, intestinal digestion physiol., intestinal protein synthesis, and expression of inflammatory-related genes of triploid juvenile rainbow trout (Oncorhynchus mykiss) were investigated. Five diets containing 0.86%, 1.65%, 2.10%, 2.85%, and 3.50% arginine were fed to satiation to triplicate groups of 30 fish per tank for 8 wk. The results showed that the weight gain rate, specific growth rate, and protein efficiency ratio significantly increased. The optimal dietary arginine requirement was 2.48% (5.97% of dietary protein) based on quadratic regression anal. between specific growth rate and dietary arginine content. There were no significant differences in crude lipid and ash content. Moisture significantly decreased, and crude protein content significantly increased (P < 0.05). Superoxide dismutase, catalase, and lysozyme levels in serum and the liver first significantly increased and then decreased with the level of arginine compared to the control group (P < 0.05), while the malondialdehyde level significantly decreased. Intestinal lipase and amylase levels significantly increased, but there was no significant difference in trypsin level (P > 0.05). The muscular layer thickness and villus width foregut in the 2.85% group were significantly increased. TOR at 2.86% and IGF-1 and S6K1 at 2.11% reached the maximum level, and IL-1β, IL-6, and IL-8 showed a decreasing trend with their lowest levels in the 3.50% and 2.85% groups. The expression of TNF-a first decreased and then increased with the arginine level. Both TGF-β and IL-10 expression first decreased and then increased with the level of arginine and reached the maximum value in the 2.85% group. There is an increasing interest in investigating dietary strategies able to modulate the gut microbial ecosystem which, in turn, may play a key role in human health. Dietary fibers (DFs) are widely recognized as mols. with prebiotic effects. The main objective of this systematic review was to: (i) analyze the results available on the impact of DF intervention on short chain fatty acids (SCFAs) production; (ii) evaluate the interplay between the type of DF intervention, the gut microbiota composition and its metabolic activities, and any other health associated outcome evaluated in the host. To this aim, initially, a comprehensive database of literature on human intervention studies assessing the effect of confirmed and candidate prebiotics on the microbial ecosystem was developed. Subsequently, studies performed on DFs and analyzing at least the impact on SCFA levels were extracted from the database. A total of 44 studies from 42 manuscripts were selected for the anal. Among the different types of fiber, inulin was the DF investigated the most (n = 11). Regarding the results obtained on the ability of fiber to modulate total SCFAs, seven studies reported a significant increase, while no significant changes were reported in five studies, depending on the anal. methodol. used. A total of 26 studies did not show significant differences in individual SCFAs, while the others reported significant differences for one or more SCFAs. The effect of DF interventions on the SCFA profile seemed to be strictly dependent on the dose and the type and structure of DFs. Overall, these results underline that, although affecting microbiota composition and derived metabolites, DFs do not produce univocal significant increase in SCFA levels in apparently healthy adults. Scientific data of nutrient variations in different beer styles are scarce. This study focuses on characterizing German beer styles in regard to their differences in nutrient composition and aims to improve available data for the calculation of nutritional value. 25 retail beer samples of five different German beer styles (Pilsner beer, wheat beer, crystal wheat beer, export beer, dark beer) were analyzed for their nutrient content. Overall this survey revealed significant differences (p< 0.05) in the proximate composition (ash, protein, ethanol, glucose), vitamins (thiamine, riboflavin, vitamin B6) and elements (copper, manganese) for the chosen beer styles. The benefit of these new data is exemplified by the calculation of the nutritional supply for average beer consumption and compared with previous data. For the average beer consumer, this study gives higher values for the percentage of daily nutrient recommendation of niacin, vitamin B6 and folate, whereas lower values are given for alc. and elements like copper and iodine. Our findings demonstrate that these new data provide an improved basis for nutritional value calculation in future consumption studies.
